So, #AI #DataCenters don't really use very much water. The water reports are not actually pulled from the system, and long term they won't really affect water supplies unless the area is already stretched.
What I am, really, concerned about is the destruction of micro-ecologies to build these systems, the destruction of aquifying biomes with hard surfaces, and generally the way the massive land use is going to create huge long term problems by disrupting natural aquifers.

This isn't really specific to AI, it's just that the land area usage of these systems is absurd. Land usage is probably a bigger environmental concern than either electricity or water use. Particularly since the majority appear to be being built in distressed ecosystems.
