It might be one of those things that you'll better work out over time. As you get a more intuitive grasp of the space and the demands of the activities you'll be doing. You may find you use some things more than others and need them closer to one hand or the other etc. Try different things until you get a set up that suits you best.
I hope that you get some cloudy days there, hon. Kitchens are stuffy at the best of times.

Ive been doing that...extremely disorganized is not the way...stupid stoner brain 😭 so, one of the reasons I love love love working in a professional kitchen, especially a fast paced on is the "dance"...every move is second nature, mise en place 🤷♀️ i dont want to take one step more than I have to. The dream 🥹
