turns out the mixed stockpiles from which pre-ground coffee is produced are often infested with cockroaches to the point that people allergic to them also tend to be allergic to most brands of pre-ground coffee. of course there are regulations because some contamination is unavoidable but e.g. the FDA’s food defect levels allow for an average of 10% of green coffee beans by count to be infested or damaged by insects and mold
