I have resisted for so long trying to make a grilled cheese sandwich with mayonnaise instead of butter on the bread. I've had it suggested many times, I've seen pro chefs do it, but it still felt wrong. And that's to someone who often uses mayo instead of butter on a regular sandwich. But I've finally tried it. The flavour is almost exactly the same to me, and the simplicity was worth it. I think Chef Frank Proto's "medium-low" is higher than my "medium-low", but otherwise, this turned out great.
