I am assuming everything other than the two ext4 partitions will have to go. Your /dev/sda5 the FAT32 mounted at /boot/efi has to stay too! That’s your EFI System Partition! What you can do is delete the “Microsoft” directory that’s on there, but keep the one named after your distribution!
