Welp there was a power outage last Sunday morning that outlasted the UPS so I took advantage of the downtime to update Sundial's BIOS to v1.70. That made it possible to enable resizable BAR. (Turns out that wasn't enough to make the xe driver happy, I also needed to disable CSM ("compatibility support mode"?), but that was just one more reboot.)
I still need to replace the power supply fan (or just the whole PSU), but that's at least one sysadmin task off the checklist!

I'm hoping to get another couple of years out of Sundial's current configuration, but I think in 2028 or so I'll look into a wholesale rearchitecture: half-height caster rack, Epyc machine, motherboard with support for dual power supplies, and a more capacious UPS - maybe 90 minutes of holdup instead of ~45. We'll see how the RAM and storage markets are at that point. Hopefully ZFS on Linux will support AnyRAID by then too, that'll be useful.
