What do you think is the difference and some pros/cons of a fairphone with e/OS vs. an unlocked pixel with grapheneOS?

Used Pixels with Graphene will be your cheapest option. The concept of Fairphone is awesome, but for Americans they’re pretty expensive. Morally the Fairphone is the better option from a hardware standpoint.

GrapheneOS is up to date while e/ is miles behind on security and features. Graphene’s sandboxed Google play works very well if you need it too

2 completely different propositions : gOS is all about security - do you live in a Surveillance State? (The answer today is most probably yes) e/OS is all about🖕google - do you think google is a nefarious entity part of today’s world problems? (I think absolutely yes) So your choice isn’t one because it’s apples and oranges. I can’t go for gOS because it means I’d be waving around a pixel, I’d be a mobile billboard for google. A fairphone is another statement entirely, and with an alternate OS from a small French business it’s the most political choice I can make.
