Tried something new for pancakes this morning and it turned out *really* good...
500 g weak flour
100 g sugar
1 tbsp baking powder
Pinch salt
2 eggs
250 g milk
250 g buttermilk
Splash whiskey
Butter for frying
Optional: blueberries
Bake as usual: whisk together dry ingredients, then add liquids and whisk until smooth. Pan to low-medium. Smear pan with butter, pour ~10cm disks, add blueberries (frozen works fine). Wait until bubbles form, check for golden underside, flip. Serves 3-4.

A couple tips that took me surprisingly long to figure out: set your oven to 130 F or so, and put your plates in while cooking--hot plates keep food nice and warm while you eat. Put each batch of pancakes in the oven as they finish, until you're ready to serve.
