I’m curious where this stance is coming from? Most of the security foundation of the internet is built on top of a basic premise that the ability to create a record on a domain == you own/are that domain.

It seems that the use cases in Gaia-X where such that the DNS system wasn't good enough for their requirements. Especially as the stateless assumption domain == you own/are that domain does not persist over time. The stance that this isn't good enough comes from the manufacturing industry and from academia.
