I have a friend who lived in Italy for the last decade or so and he loves to tell me about carbonara and how everyone in the world cooks it wrong yadda yadda something something I kind of stop listening when he gets in that mood... but anyway, real Italian cooking is pretty special hey :)
Italians have immense appreciation for balance.

@ewen@social.ewenbell.com @caity@bne.social I agree, we were in Umbria most of the time and the flavors you can get out of like five ingredients and some pork are amazing! Well, I guess that shaving black truffles over everything and drinking Montalbano Sagrantino might have contributed!
