@ewen@social.ewenbell.com @caity@bne.social I cook 90% of what my wife, son and I eat and I have to say that spending a couple of weeks in Italy was a revelation for me. I was over spicing a lot of what I cooked and clearly not capturing the intent of some of the dishes I made regularly. The "In Bocca" books helped a lot with the simplicity and subtle things that I was missing and also brought positive comments from my audience! I guess I was reasonably good at Hearty but didn't understand Subtle!

    @mycotropic@beige.party @caity@bne.social I have a friend who lived in Italy for the last decade or so and he loves to tell me about carbonara and how everyone in the world cooks it wrong yadda yadda something something I kind of stop listening when he gets in that mood... but anyway, real Italian cooking is pretty special hey :) Italians have immense appreciation for balance.
