And in the end it boils down to "fuck around and find out". It'll work out somehow.
Whether that was 2 or 3 cups of wine or 125 or 143g of sugar is not really relevand. Even reacing an egg with some starch and sour cream works in some recipes. In others it definitely wouldn't.
But I asume THAT is senior level....
Knowing where shortcuts are OK and where they definitely are not...
