I’ve done a bit of this for my own amusement, so a few observations.
I’ve given OCR a bit of a go, but generally found the correction too tedious. During COVID I typed out Jimín Ṁáire Ṫhaiḋg from an Internet Archive pdf.
My choice is to make punctuation spaces into 0x202f (Narrow No-break Space), but that’s just because I like the way it looks.
The Caighdeánaitheoir (http://www.potafocal.com/cai/) does a reasonable job of converting obvious old spelling differences. Not 100% sure who came up with it but Michal would probably be happy to help.
With Ní Ghráda, you’ll probably already have a more standard Munster Irish but I’d still be very cautious about correcting spelling in your initial run as there are lots of small dialect differences, especially around broad vs. slender, that appear in older books, e.g. tuigim vs. tigim, taispeáin vs taspáin etc.
Oh, and I have some experience with the epub format too.

After a quick look at your fixes document, I think you’ve got a few mistakes there, e.g. Ḋeineas is just the normal Munster past 1st person of déan, i.e. rinne mé in other dialects.
Also ná is used instead of nach and does not cause eclipsis, e.g. ná fuil? vs nach bhfuil? so there is nothing wrong with the sentence starting “ Tá fios agat ná baineann sé aċ bliain…
Nothing wrong with dob ḟíor dó either! B’fhíor dó sa mhéid a dúirt sé san alt roimhe sin, i.e. “rud a raibh an ceart aige faoi” “which he was right about”. Is fíor dó = tá ceart ag.
I would leave teasbáint as is, just a different arrangement of broad/slender.
Everywhere in the book Árd-Ṁáiġistir is capitalised, so I can’t see what’s wrong with an tÁrd-Ṁáiġistir.
