Sharing this recipe today after buying some tarty yellow plums that weren't fully ripe yet and I didn't want to throw them out; needed to cook some lunch anyway so I made cooked some seasoned chicken with this sauce with the side of buckwheat. There's honestly nothing to it
Pan-Seared Chicken Breast with Maple Yellow Plum Sauce (1 Serving)
**Ingredients**
- 1 boneless, skinless chicken breast
- 2 yellow plums, pitted and sliced into wedges
- 1 tbsp olive oil
- 2 tbsp maple syrup (or honey)
- 2 tbsp water (substitute for broth)
- 1 tbsp soy sauce
- 1 clove garlic, minced
- ½ tsp grated fresh ginger
- Pinch of star anise, cinnamon and cloves (5-spice)
- Salt and black pepper to taste
**Instructions**
1. **Season & Sear**: Season chicken breast with salt, pepper, and a pinch of five-spice. Heat oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through (internal temperature 165°F). Remove and set aside.
2. **Make Sauce**: In the same pan, add plum wedges and sauté for 1–2 minutes. Add maple syrup, water, soy sauce, garlic, ginger, and five-spice. Simmer 3–4 minutes until plums soften and sauce thickens slightly.
3. **Finish**: Return chicken to the pan, spooning sauce over it. Warm for 1–2 minutes.
4. **Serve**: Slice if desired, spoon extra sauce on top, and serve with rice or vegetables.
