Snikket is the easiest and up in under an hour from scratch if you don't work against it. (yes it wants to manage everything itself, otherwise you need advanced docker skills)
prosody only needs a virtualhost and the certs for that domain in its cert folder. Then it's opening some ports and a dns record.
Then it should be running and working.
Everything else can then be added from there.

@menel I make the setup much more complicated than it needs to be, by having own container configurations on top of immutable OS. It literally may be just a skill issue on my side when I mistranslate one configuration style into the other. I'll try again sometime soon, when I have energy to fight it.
