Some thoughts:
The curves explain "Fomapan highlights" (the flat, lifeless sky): the curve starts to droop after you get about 5 stops (0.3 log units) of exposure above your shadow point. If the sky lands up there, it will get flattened.
The non-obvious steps I had to take to get these curves show why Fomapan 100 has a bad reputation in some corners.
I should try for a brighter light (a flash?) so I can compare a 0.4 sec exposure to my 21 sec exposure.
