Former engineer here... a simple long threaded bolt with 2 nuts will suffice.
Find one approximately the same length and same thread... can't tell the size from a pic. But you can pop along to your local hardware store with it and test some nuts on it.
Take the 2 nuts and thread them on to the bolt. Get the bottom nut at the right position, and then using two spanners the right size for the nuts, turn the two nuts into each other until they lock.
This should solve the problem... and cost a few pennies.

@Anomnomnomaly@beige.party That's my back up plan. I'm a chronic hoarder of Useful Fastenings because of having old cars but I haven't found anything with a matching thread yet. Also, the proper item will just feel nicer to use than a nut.
