LineageOS and GrapheneOS can run without GApps, and if you do install GApps on GrapheneOS, you don't give it any backdoor control over your phone. It runs sandboxed where it can't do the malicious things it wants to do, but where you can still use apps that need Play Services, purchases thru Play, etc.
