@sparrowsion when you ask about Google Wallet, I think you're really asking about Google Pay.
There are alternatives to Google Wallet in the sense of an app that stores e.g. plane tickets.
If you're searching for a tap to pay solution like Google Pay, things get difficult. Some banks in Germany offer tap to pay via their app, but it's the exception.

@sparrowsion also if you're running an alternative ROM, some banking apps refuse to run, because they expect Play integrity checks to pass, that OSes like @GrapheneOS don't pass. So you might end up with a bank that support tap to pay via their app, but that app only runs on stock android. Honest opinion: mobile computing is a pretty big mess when it comes to privacy and freedom of choise.
