@VanessaK At least two possibilities I know:
1. find a way to contact Simon Roper (he's prominent on YouTube). An extremely good specialist of *all* periods of english, with phonetics, grammar and everything you need. I've never personally talked to him, I don't know his rates etc., but I do know he is super knowledgeable, even in historical dialectology, so if your characters come from a particular region, the chances are very high Simon will tell you how exactly they must have spoken.
2. Those people are also very knowledgeable, but I don't know whether they provide such a service, they focus mostly on teaching: https://ancientlanguage.com/old-english/.
