Northern Journey, a pretty first person theoretically shooter but more an exploration game of a beautiful Scandinavian fantasy world made entirely by one man.
Hoplite, simple mobile game. Bite-sized turn-based strategy.
Nantucket, strategy whaling simulator.
Qvadriga, light racing game with chariots; it's also turn-based strategy.

@dragoniff2 I think those might actually be too new to fit the bill, so mileage made vary. Maybe Unreal World, which is probably one of the most continually updated games of all time going back decades. Think of it as a bit like a roguelike survival simulator in Iron Age Finland? Excellent hunting system in a sense you better get good at tracking. That one might fit meet the oldness requirement
