Who wants hot chocolate! Let’s stir together a 1:2 ratio of cocoa powder and brown sugar in a small pot. The brown sugar dissolves better than white sugar and I think tastes better with the cocoa. Add a splash of vanilla. And a scoop or more of collagen powder. It makes it taste like marshmallows! And it also improves texture. Plus who doesn’t need more collagen in their life, right? Now we add a splash of water. And stir. And add more water and stir bit by bit just until the mixture is wet. Like a thin paste. You can use a spoon or a whisk depending on whether you like stirring or doing dishes more. A spoon is easier to clean, but not as fast at breaking up clumps. To the stove! Bring that mixture to a boil but keep stirring. Sugar burns. You now have chocolate syrup. Which you can cool and use later for either hot chocolate or chocolate milk. But if you want hot chocolate now, add your milk to the pot and gently warm it. Not boiling please. Scorched milk makes that weird film on top. Bonus points if you use raw milk, and also a good reason to not overheat your milk Top it with whipped cream. Or add it 50/50 to hot coffee for a nice mocha.
