@jztusk I really like the way she's laid out the book and that she's giving proper measures (grams) alongside American measures. What's concerning me is she's using higher fat butter (she uses 82%, which is higher fat than Canadian (and US) standard. Luckily, I'm already in a butter exploration so I've got some. I may do the "regular" vs premium comparison, too.
