@zekjur have you tried [[tinode]]? https://tinode.co/ I haven't but it looks interesting and ticks some of the boxes. You could also do Matrix on Dendrite, but it's deprecated it seems! Else I like Zulip's UX, but that's in Python.

@zekjur I switched back to XMPP. Solid protocol, good encryption (thanks to OMEMO over different devices) and a vast choice for clients.
