Sometimes people ask me ‘what’s the best hot sauce from Malaysia / Singapore / Thailand / Indonesia’ and I don’t have an answer
Because the answer is
Every restaurant, stall, family, sort of makes their own blend of a type of hot sauce or sambal or chilli paste.
Also there are different kinds for different dishes
Often, you prefer one spot over another because their house style chilli paste is something you prefer, vs your friend liking another one
The idea of ‘getting a pre-made hot sauce or chilli paste off the shelf’ is very very new (and still not common practice)
So the answer is, I can’t recommend any (I am a lifelong US sriracha disliker too.. also the ‘sambal oelek’ you get in the U.S. is almost entirely different from the sambal that Malaysians and Indonesians use.. it’s just one out of hundreds of varieties of sambal)

God I feel so incredibly lucky to have been blessed with multiple amazing food cultures in my life / history (and to have absolutely no food allergies), and to have experts from all groups who like to feed me

southern Chinese broadly (mainland style plus diaspora style)

southern Indian broadly (with a strong preference for Kongunadu and Chettinadu food but really any Kerala and Andhra food)

all kinds of Malay and Indonesian food and their many varieties (the food of East Java is my fave)

all kinds of Thai food (especially southern Thai and Isaan food!)

Malaysia has its share of racist and xenophobic people, and one place where it stands out is people begrudging popular places for ‘outsourcing’ the cooking to ‘those foreigners’ who don’t ‘get it’
Much of the labor that drives the food business in Malaysia IS the labor of the Burmese refugees here and increasingly the workers from poorer parts of Indonesia especially Sumatra.
I think if Malaysians don’t like it they should offer to work in hot kitchens at long hours for very little pay instead.
I’m kind of grossed out looking at some of the comments on Google Maps about specific places.
In Singapore we have similar complaints from racist people except we also get a special Chinese-on-chinese racism, which is mostly rich southern Chinese Singaporeans who dislike that ‘our Chinese food’ is now being prepared by *those* uncouth northern Chinese rural people
IMHO both groups of people are close cousins and should fuck off

I’ve never had specialty coffee that is made of Liberica beans but he had a small batch from West Java and it was really unique
