Ahh, these were the days like. Putting the UVEPROMS under the sun and waiting for them to be erased to use them again. Just kidding! I am not that old. But I used to have a professor telling us stories about that sort of thing many years ago.

Same here, Debian since Squeeze. A couple of years ago I just decided to go a step further and go with Kicksecure. Which is basically just hardened Debian.

If you want privacy you should be using Monero. If you use Monero you can use the official wallet together with Trezor. In fact, if I am not mistaken you have to, because from what I recall the Trezor Suite has no support for Monero.
