    Traditionally in Mí na #Bealtaine one should eat nettles at least a few times. I&amp;#39;ve been waiting for today to try a new food-crime: Nettle Tofu. I&amp;#39;ve make nettle leafu before, and it was interesting but had two problems: too little of it, and too much flavour. I&amp;#39;m hoping that by making a combined curd of soy and nettle, I can achieve a happy balance of volume and flavour. #Beltane
