  Traditionally in Mí na #Bealtaine one should eat nettles at least a few times. I've been waiting for today to try a new food-crime: Nettle Tofu. I've make nettle leafu before, and it was interesting but had two problems: too little of it, and too much flavour. I'm hoping that by making a combined curd of soy and nettle, I can achieve a happy balance of volume and flavour. #Beltane
