For today&#39;s lunch (made by my partner), a traditional chickpea curry from Kerala, called Kadala curry (lit. chickpea curry). It&#39;s the sort of thing every house makes slightly differently. Usually eaten with Puttu (https://en.wikipedia.org/wiki/Puttu) #food

You know the fancy way to cut pieces of carrot by cutting at a slant and rotating before the next cut? (a) What&#39;s it called? (b) How do you actually get equal-sized pieces from this technique? Are cordon bleu chefs just using cylindrical carrots while the rest of us have to use the leftover conical ones? #food

I notice that the kiridashi has _three_ distinct bevels on the cutting edge. The very last one must be only a quarter of a millimeter or so (but it&#39;s very even, and distinctly visible because of the way it reflects light). Sharpening this blade will be interesting.

@skinnylatte Your recent mentions of trains and food reminds me: railway station food in India seems a thing of the past. There&#39;s no point looking forward to eating special things at specific stations any more. Everywhere, you get the same mediocre pre-prepared stuff that&#39;s just reheated at the platform. No need to plan ahead about which stations you&#39;ll jump out at on long-distance journeys, because it&#39;s all the same now. @ramkay @rohini

Meanwhile, here&#39;s some fusion cuisine: White soyabeans, grown here in the mountains, cooked in the water used a couple of days ago to cook gehat (Macrotyloma uniflorum), also grown here; but made in a Kerala-style curry with freshly-ground coconut from South India, cooked in a Chinese-style wok made in Delhi, on a German stove with Italian burners using gas imported from Qatar (maybe). The only way I could have done any more fusion is if I&#39;d added bechamel sauce. #food
