@fullywoolly@mastodon.social Actually, quite hard to figure all this out. People pointed me at a few resources here. It's not written down, and YouTube videos don't go into it... all the true knowledge of coffee processing is held by non-Internet people, IMHO. There have been a few recently of steps along the way, though.
