- you could look into guix. not tried it but people say it's good
- vrchat works well on linux, but you should probably use the FOSS runtime Monado, since it runs MUCH better on linux. more info here: https://wiki.vronlinux.org/
- For a VM, you can only pass through the GPU if you are either willing not to have a host or have an iGPU the host can use temporarily. This isn't a limitation of the GPU, but of how the PCIe passthrough works. IIRC it is possible to automatically unload and load the drivers on the fly, but it takes some tinkering with scripts.

@pearl@fedi.rrr.sh as for GPUs... AMD. just... straight up no exception. Nothing else runs remotely as good as AMD GPUs. They are also easy to pass through and don't get the dreaded error 43 that nvidia gives when detecting a VM.
