@jamie@fedi.jametek.com american cheese is ultra-processed, so it's distinct from cheddar. It's incredibly processed colby or cheddar, to be creamy like government cheese.

@jamie@fedi.jametek.com fast food burgers for example use american cheese since it's creamy and uniform and melts nicely. same with macaroni and cheese.
