@rhelune@todon.eu Home cooking means that you can take care of the quality of every ingredient and of every stage of production. When we eat out, usually at lunchtime when travelling, we try something I don’t do at home. Recently, deep-fried maitake, which was wonderful. There are certain categories of food that my wife now refuses to eat when we are out, particularly pasta, because the quality of the ingredients, the quantity, and the balance of the seasoning can rarely match what we make at home. I am no master chef. I simply care about taste and the eating experience. I have always argued that a necessity should be a pleasure. If you approach food with pleasure in mind, what does time matter? Preparation is part of the pleasurable experience.
