Making shit work has always been the essence of all my jobs. I like it, but gosh it's tiring some days.

The thing with the certs is, there's nothing wrong here*. There's no reason all these operating systems should conform. Neither is it Dockers responsibility. You can sidestep it a bit by having a sidecar container as a proxy but that's not always possible (apps enforcing https). It's mostly an integration problem. *Arguably apps providing their own CA is a bit eh, but this often happens because ca generation/install isn't done during the container build
