Lemon Jumbles
These lemony, melt-in-the-mouth biscuits (cookies) are made extra special by dredging with icing (confectioners') sugar just before serving.
Makes about 50
INGREDIENTS:
100 g/3 oz/s cup butter, softened
125 g/4/2 oz/2 cup caster (superfine] sugar
Grated rind of 1 lemon
1 egg, beaten
4 tbsp lemon juice
350 g/12 oz/3 cups plain (all-purpose) flour
1 tsp baking powder
1 tbsp milk (oat is fine)
Icing (confectioners') sugar, for dredging
Steps:
1 - Lightly grease several baking trays (cookie sheets).
2 - In a mixing bowl, cream 2 together the butter, caster (superfine) sugar & lemon rind until pale and fluffy.
3 - Add the beaten egg and lemon juice a little at a time, beating well after each addition.
4 - Sieve (strain) the flour & baking powder into the creamed mixture and blend together. Add the milk, mixing to form a dough.
5 Turn the dough out on to a lightly floured work surface and divide into ~ 50 equal-sized pieces.
6 - Roll each piece into a sausage 6 shape with your hands and twist in the middle to make an 'S' shape.
7 - Place on the prepared baking trays/cookie sheets & bake in a preheated oven, 170°C/325 F/Gas Mark 3, for 15-20 minutes.
