In things that don't sound like they should work, but are actually pretty good? This no-oatmeal overnight oats. I just made my second batch, subbing coconut milk (the kind you get in the dairy section, not the kind in the can) for the almond milk, and adding some cinnamon, cardamom, and ginger to get a bit of a Chai spice thing going on.     (For the record? I'm not even remotely trying to "do keto" but I find a lot of keto recipes are a good starting point for just cutting back on carbs. Obviously, if you cannot tolerate any artificial sweeteners, this is way harder, but I am lucky enough to be good with all of them.) In other sweet treats, I made some mocha mousse (sugar free chocolate pudding mix, heavy cream, espresso powder) which is pretty good, and a coconut porridge which I think would have been pretty good if I left out the nutmeg - I don't know why I didn't I *know* I don't like nutmeg.
