#risotto As a Northern Italian, coming straight from risotto land, with a huge history of high level family risottos, and decades of research and perfecting risotto, I'll say this, which, in these dark days, goes against even top northern Italian starred chefs and modern mainstream opinions of influencers, cookbooks, YouTube recipes. Very contrary to pasta, no, risotto should really not be cooked "al dente".
