They don't buffer the data or anything (why would they, the way video signals are transmitted has not changed much and it would only increase costs with no benefit) so there isn't any more latency doing it that way than with a GPU with analog outputs. You might need a better adapter if you want higher resolution and refresh rate, but you need a high end monitor to use those, and your post is about TVs.
