Schism Tracker is an open source implementation of Impulse Tracker (a famous tracker back in the day), on a bunch of platforms (including macOS, but not iPad).
Renoise is a paid sampler / tracker, with a free demo. I’ve not used it, but supposedly a fairly advanced tracker. Also macOS but not iPad.
