I guess it's more of a "splash" image than a logo, it shows up in Snow's about dialog.
An actual logo would need a competent designer. We've tossed around some ideas on Discord, like a snowball or snowflake with a bite out of it, evocative of an Apple.

I also made this banner for BlueSCSI Toolbox when it detects it is running in the Snow emulator. Making 1bpp art was a fun challenge.
