Last night we wound up not being able to wait long enough on food prep to actually cook up the single new potato we had pulled, but oh my fucking lord, we roasted it tonight with nothing besides salt, pepper, & olive oil... all I can say is: believe the hype. I've had new potatoes at fancy restaurants & such, but having one that was just in the ground less than 36 hours ago? Unimaginable. There's so little time for the moisture to dry up or for the starches to set. That's the most buttery, flavor-packed potato I've ever eaten. :ablobcatcry:
