I'm making more black raspberry jam today, and I had so many berries that I needed a full kilo of sugar! I am not used to using sugar at that scale

@belehaa@wandering.shop 😋 ... jam time ... We usually use dextrose (sold here 🇨🇦 as corn sugar at Bulk Barn) or glucose (sold at brew supply stores). That doesn't fix the "insulin spikes are bad for you" problem. It does fix the "fructose from added sugar (sucrose) is metabolized like alcohol" problem (see anything by Prof. Robert Lustig) Also, we often find that using apples to add pectin, and tone down strongly flavoured fruit, is often sweet enough by itself. Just our 2 🪙's...
