When referring to the upcoming weekday it's either "weekday" or "this weekday", and the following weekday is "next weekday". For a fun trajectory: When talking about a past weekday it's "weekday" for the closest weekday, and "last weekday" for either of the two last weekdays. Also, talking about "weekday" on "weekday" means in a (or last) week, not today.
