Filling more gaps: there's now a Cores page in preferences.
It does 3 things:
First - it lists installed cores and allows to view information about them in one place, for more visible attribution. We already had credits and copyright+license in the about dialog, but that's not an ideal place for it for many reasons - it's all spread out between multiple pages, and there's no way to see any other info, such as core versions. So - it's now all here.
Next - it lists platforms that either don't have cores - or have more than one core, in that case it allows to select which core is used.
Finally, in flatpak it lists available extension that aren't already installed. If only previewing extensions in gnome-software actually worked reliably...
Ideally people will never see the last 2 sections (they are hidden when each platform has exactly 1 core and all extensions are installed), but they are there if needed.
I also slightly reorganized the settings pages since we have quite a lot by now.

A quick change: selected GB model is now reflected in empty covers, since there's an SGB icon now. (I disabled covers for these screenshots)
