In terms of emulators, the only Nintendo ones I’ve used are DeSmuME, which is a DS emulator, and Dolphin, which is a GameCube and Wii emulator. Both worked pretty well in my experience and I can’t recall having any particular issues. In terms of ROMs, it’s really just a quick google search to find.
As others have said, use a VPN when pirating

Eden for Switch and Cemu for Wii U as well. Plus a number of options for the older consoles and handhelds, but Retroarch would cover those.
