Poke sallet (or salad) is a traditional Southern Appalachian dish made from the young, tender leaves of the poisonous Phytolacca americana (pokeweed) plant, boiled multiple times to remove toxins. It is foraged in early spring, commonly served sautéed with bacon grease, scrambled eggs, or potlikker, offering a taste similar to spinach or turnip greens
