Turns out: my UEFI decided to show an error message, due to invalid keys for GRUB. It was dismissable, but it forced GRUB to use that resolution, which is way lower, than my monitor (probably due to compat). Now I imported the keys and forced GRUB to use my resoltion and that fixed it. (maybe only one of those fixed it)
