This is literally part of standard flat earth models. The sun flies around in a circle above the earth, and when it gets far enough away from your location, that’s sunset/night. I don’t know how they deal with the lack of change in the sun’s apparent diameter. Edit: Looked it up. It’s due to “atmospheric distortion.”
