If you find the list of encoders and press enter on one, there is one that exists by default when you first obtain the program and you can edit it and change stuff. You can then add multiple encoders and stream to more than one at the same time if you want to perhaps make low and high quality streams, for example, or have multiple servers configured. Each encoder ends up as a checkbox and you can check or uncheck them.
