No configuration is required: GRUB’s procfs and luks modules are loaded automatically when encrypted devices are declared via luks-device-mapping (see Mapped Devices).
I somehow missed this the first time around and was wondering why there were no configuration examples. Brilliant!

@samuel Same for me: I was expecting some extra work in my config and then realized the thing was already working as advertised. :-)
