Mozilla think that adding some controls to their settings to allow users to opt out of the AI features is good enough. No sign of a separate build without them there at all, but at least a switch to disable them, in theory. They say: "Once configured, the AI preferences will persist across browser updates" Though they do have a history of turning on telemetry over and over again even when you keep turning it off. Or inventing new telemetery for you to turn off each update. One switch will turn off: "AI-enhanced tab grouping with suggested names," Which sounds horrifying, but then I don't really like tab groups anyway.
